Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt

For the Caramel Crunch:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 cup chopped nuts (walnuts or pecans)

Instructions:

  1. Prepare the Cake Batter:

    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
    • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined. Stir in vanilla extract.
    • Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool completely before removing them from the pans.
  2. Prepare the Caramel Crunch:

    • In a saucepan, combine granulated sugar and water over medium heat. Stir until sugar dissolves, then let it boil without stirring until it reaches a deep amber color.
    • Carefully add butter and heavy cream, stirring continuously until the caramel is smooth. Remove from heat and let it cool slightly.
    • Stir in chopped nuts and set aside to cool further.
  3. Assemble the Cake:

    • Place one cake layer on a serving plate. Pour a generous portion of the caramel crunch over the first layer, spreading it evenly.
    • Gently place the second cake layer on top and repeat the process, covering the entire cake with the remaining caramel crunch.
    • Allow the caramel to set for a while before slicing and serving.
  4. Enjoy the Bliss:

    • Revel in the divine combination of moist cake layers and the irresistible crunch of caramel and nuts. Each bite is a celebration of homemade goodness.

Say goodbye to store-bought cakes, and relish the satisfaction of creating a Caramel Crunch Cake that will have everyone asking for seconds. Your kitchen has now become the go-to destination for delectable desserts!
