Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- A pinch of salt
For the Caramel Crunch:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 cup chopped nuts (walnuts or pecans)
Instructions:
Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined. Stir in vanilla extract.
- Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely before removing them from the pans.
Prepare the Caramel Crunch:
- In a saucepan, combine granulated sugar and water over medium heat. Stir until sugar dissolves, then let it boil without stirring until it reaches a deep amber color.
- Carefully add butter and heavy cream, stirring continuously until the caramel is smooth. Remove from heat and let it cool slightly.
- Stir in chopped nuts and set aside to cool further.
Assemble the Cake:
- Place one cake layer on a serving plate. Pour a generous portion of the caramel crunch over the first layer, spreading it evenly.
- Gently place the second cake layer on top and repeat the process, covering the entire cake with the remaining caramel crunch.
- Allow the caramel to set for a while before slicing and serving.
Enjoy the Bliss:
- Revel in the divine combination of moist cake layers and the irresistible crunch of caramel and nuts. Each bite is a celebration of homemade goodness.
